-1 TBSP minced garlic
-1/2 diced onion
-1 TBSP minced ginger
-1 or 2 diced jalapeno (remove seeds if you don’t want it too spicy)
-1/2 cup diced red peppers
-1 cup grated or diced carrot
-1 tsp coconut oil to sautee (optional)
-1 TBSP whole cumin seed
-1 TBSP ground cumin
-1 tsp ground coriander
-1 tsp paprika or chili powder
-1 cup red lentils
-3 cups veggie broth

//Roasted Brussels Sprout & Butternut Squash Quinoa
-4 cups shaved brussels sprouts
-2 cups chopped butternut squash
-salt, pepper, dried herbs of choice
-1 TBSP maple syrup or agave
-1 TBSP coconut oil or vegan butter (optional)
-1 TBSP balsamic vinegar
-1 cup quinoa, rinsed well
-2 cups veggie broth or water
-1/4 cup diced onion and 1 TBSP minced garlic to flavor broth (optional)
-handful of roasted nuts or seeds
-handful of dried cranberries or raisins

//Roasted Veggie Pasta
-4 cups assorted veggies, uniformly chopped
-1 TBSP coconut oil or vegan butter (optional)
-salt and pepper to taste
-1/2 package pasta of choice, prepared to package instructions
-nutritional yeast and hemp seeds to top (optional)
