These 3 Ingredients breakfast oatmeal cookies are a perfect healthy and so easy to make. These amazing cookies are gluten free, vegan and only 3 healthy ingredients: oatmeal, banana and chocolate chip.
Today I added unsweetened grated coconut for little extra flavor. But that is totally optional. I just wanted to show if you would like to add anything else it is easy to add.

BANANA OATMEAL BREAKFAST COOKIES
1 1/2 cups quick oatmeal
2 large very ripe bananas
1/2 cup chocolate chips
1/2 cup unsweetened coconut (OPTIONAL)

Bake 350F for 12-15 min
