#1 Smashed Pea & Lemon Toast 0:42

1 clove garlic
1 ½ tbsp olive oil
½ cup (70g) frozen peas
½ tsp lemon zest, or to taste
1 tbsp fresh lemon juice
generous pinch of salt

2 slices of bread (i used 4 tiny slices)
cherry tomatoes
optional: hummus or vegan cream cheese to add to the bread first;
vegan chili mayo to drizzle overtop

→ serves 1

#2 High Rise Pancakes 2:08

1⁄3 cup (80g) plain soy yogurt
3 tbsp unsweetened applesauce or mashed banana
2 tbsp water (plus additional 1-2 tsp if needed)

1⁄2 cup plus 2 1⁄2 tbsp (85g) all purpose flour
21⁄2 tsp baking powder
1/4 tsp salt
OPTIONAL : 1 tbsp sugar added to the batter

1 tsp coconut oil, for frying
maple syrup for top
More yogurt for top OR other toppings of choice (berries etc)

→ 1 heaping tbsp (or ice cream scoop per pancake)

→ serves 1

#3 Loaded Polenta Fries 4:07

add to pot:
100 g (½ cup plus 2 tbsp) dry polenta
500ml (2 cups) water
1 tbsp olive oil
½ tsp salt

if needed: 1 tsp oil to brush the parchment paper

1-2 tsp olive or canola or sunflower seed oil to brush the tops of the fries with
another sprinkle of salt

bake for around 30 min at 200C, keep an eye on them they might need a lil longer depending on preferred level of crispiness

for serving:
black beans
cherry tomatoes
vegan sour cream or hummus
OPTIONAL: hot sauce, vegan shredded cheese

→ serves 1-2

#4 Favorite New Winter Porridge 6:06

½ cup (50g) oats*
¼ tsp salt
1 cup (250ml) water
1 tbsp biscoff spread
1 tbsp peanut butter

for the top:
vegan yogurt + favorite granola

→ serves 1

*can be both quick cooking or rolled oats, I used the quick kind, rolled might need a little longer to cook and or another splash of water

#5 Artemis Yogurt Muesli Bowl 7:04

vegan vanilla or plain yogurt
1 persimmon, chopped
a few tbsp frozen blueberries
cornflakes (or granola)
1 tsp unsweetened cocoa powder, dusted on top

→ serves 1

#6 Cheesy Tofu Quesadillas 7:56

1 medium carrot, grated
100g plain tofu, crumbled (3.5oz)
~ 4 tbsp of your favorite store bought tomato sauce
2 medium tortillas ~ 25cm
2 handfuls vegan cheese
OPTIONAL: oil for the pan

serve w some steamed broccoli, fresh raw veggies or a dip of some kind!

→ serves 1-2
