Cinnamon Chia Seed Pudding
Chia seed pudding is a great breakfast option because it takes 5 minutes to assemble and can be prepped the night before!
INGREDIENTS
3 tbsp chia seeds
1 tsp cinnamon
1/4 tsp vanilla extract
1 tbsp maple syrup
1 cup plant milk
INSTRUCTIONS
Add all ingredients to a cup and mix until smooth.
Mix again after 5 minutes to prevent clumping.
Refrigerate for at least 1 hour or overnight. I recommend refrigerating overnight if you want to eat it for breakfast.
Suggested toppings are cacao nibs, vegan yogurt and fruit.
