#1 Pina Colada Overnight Oats

½ cup oats, small cut (45g)
a pinch of salt
2 tsp chia seeds
1 tsp agave
⅓ cup light coconut milk (80ml)
2-3 Tbsp shredded coconut

3-4 canned pineapple rings

#2 Tomato Tofu Avocado Toasts

1 firm tofu
1 small onion
1 ½ tbsp soy sauce
1 tbsp white wine vinegar
2-3 tbsp non dairy milk
1 tbsp tomato purée
1 tbsp agave
spices of choice: ¼ tsp cumin, 1 tsp smoked paprika
1 tsp oil for frying

lemon juice
basil, optional

#3 Frozen Apple Green Smoothie

For the apples:

4-5 apples or however many you want to freeze
enough water to cover the apples
juice of 1 lemon

For the smoothie:

2 handfuls of frozen apples
½ avocado
2-5 soft dates
1 tbsp nut butter*
1-2 handfuls fresh baby spinach
¾ cup non dairy milk (180ml), more if needed
juice of ½ lime
*almond cashew butter:

#4 Peanut Butter Chocolate Oat Bars

oat crust:

1 cup oat flour (1 cup oats, blended) (90g)
⅓ cup small cut oats (30g)
¼ tsp salt
½ tsp baking powder
1 tbsp flax seeds, semi ground
⅓ cup applesauce, unsweetened (80g)
⅓ cup raw or coconut sugar (80g)
¼ cup vegan butter or coconut oil, melted (60ml)
2-4 tbsp non dairy milk (add 2 tbsp first, then mix, then see if you need more)

peanut layer:

8-10 dates, soft (soaked in water before if needed)
3 tbsp peanut butter
¼ cup non dairy milk (60ml)

→ mix with a spoon after blending, if needed

also ¼ cup dark chocolate chips or cocoa nibs (45g)
a handful of peanuts

additional crumble topping, optional:

½ cup quick oats or oat flour (45g)
a pinch of salt
1 ½ tbsp raw sugar
1 tbsp melted vegan butter
1 tbsp non dairy milk
