Vegan apple cider cheese fondue 🫕 inside a roasted pumpkin !

This recipe was in an old Halloween cookbook we each had as kids. We just veganized it.

Preheat oven to 350 degrees. Then start by cleaning out a small pumpkin and brushing the inside with a little bit of olive oil. Place the top of the pumpkin back on and put in oven for 45 minutes. In the meantime boil 1/2 cup apple cider and 1/4 cup of oat milk then add a couple scoops of vegan cream cheese and 16oz of whatever vegan cheese you like. We used @fieldroast chao cheese. Add whatever spices you like. We added red pepper flakes, salt, garlic powder, pepper, and onion powder. Finally pour the cheese into the pumpkin and serve!

TIPS: Keep the lid of pumpkin on to keep the fondue as hot a possible. Add more cider or oat milk if the fondue gets too thick.

We dipped French bread, apples, broccoli, Halloween shaped pretzels and carrots in this delicious brew.
